314% Iron?
This was my first time trying raw cacao, and to be honest, I wasn't that shocked by what the nibs smelled or tasted like. I mean, sure, they're bitter, but there's nothing strange about the bitterness. It's similar to biting into a roasted coffee bean, very similar in fact. The one thing I did notice was that, just like with any other agricultural product, you should sort through the nibs you are about to eat before tossing them in your mouth. I found quit a few shell fragments and stems in the mix. One thing I am a little concerned with is that these contain 314% of the Daily Value of Iron per serving.. I thought excessive Iron intake was supposed to be dangerous..?Another thing I was a little surprised by was that the label claims they contain 21% of the Daily Value of vitamin C per serving. I had read that the vitamin C content of raw cacao was destroyed during the fermentation process...? I am getting some conflicting information here, but I hope to sort it all... Top to learn more

Awesome quality cacao nibs - powerful and satisfying.
I'm a certified chocoholic with a weight problem. I had heard that cacao nibs had all the health benefits of dark chocolate (way more, actually) without the sugar and junk food aspects. They are loaded with antioxidants and have those powerful endorphin releasing stimulants. They are also quite high in fiber (but also in saturated fats).I got my big pile of Navitas Naturals nibs and dug right in. Well - these are a bit of an acquired taste; but once acquired, they really satisfy. Cacao nibs are broken pieces of raw whole cacao beans that have been fermented and dried (and that's it). They are brown, with a dark cocoa smell, and a seductive texture that's partly like a coffee bean (crunchy and hard), and partly like a piece of chocolate (buttery with a crisp and then melting fat). The flavor initially gives you a cocoa hit and then a winey fermented flavor that is hard to describe. The aftertaste is bitter like baking chocolate. Like a coffee bean, there's some fibrous grit...

What to do with two pounds of nibs...
This is an awesome deal, but don't purchase these thinking you'll just snack on them because they're so healthy for you...you should make sure you like cacao nibs first. The flavor is intense and something of an acquired taste.I purchased these to use with the cookbook "Bitter Sweet" by Alice Medrich, which contains a chapter of recipes for cacao nibs and the author talks about ways she tried to use nibs that were a big failure and why...how they are good in cookies, but awful in cream caramel. It even includes some savory recipes, green beans, eggplant, mushroom ragout, pasta sauce. Definitely worth a look if you've got two pounds of these things and don't know what to do with them.I should note for raw foodies: all those recipes are for cooked foods except one for a salad that is just baby greens, olive oil, red wine vinegar, salt, pepper and cacao nibs, with a suggestion to optionally add a few more items like dried currants, shaved fennel or nicoise olives...

Good quality cocao beans
What I first look for in a bag of cacao beans is size consistency. With some cacao bean products there are a lot of nib-type pieces and smaller, shriveled looking beans. The vast majority of the Live Superfoods Raw Organic Cacao Beans were full and plump. They tasted very fresh all the way to the bottom of the bag. I will be buying these beans from Superfoods again. Now I can eat chocolate everyday! These are really good in yogurt and I know I'll find more uses. I will definitely buy this product again, most likely in bulk. I'm a health food junkie and nibs will probably be a new staple in my diet. In case you're wondering, I thought these were bite-size (from the picture) but they're actually little flakes. You shouldn't compare the taste to "normal" chocolate because all you really taste is the tons of added sugar. There is no sugar in these, think bitter cocoa powder. Top to learn more

Fermentation is part of the cacao harvesting process
A number of reviews have remarked that the bag smelled fermented or like vinegar when opened. I experienced the same thing, and being a first time consumer of cacao nibs, specifically this brand, I was concerned that I received a bad batch. Upon further research, I learned that fermentation is a necessary part of cacao processing, used to reduce astringency and develop the flavor we associate with chocolate. Fresh cacao seeds have no chocolatey flavor at all. So, much like my first real piece of Roquefort cheese, I learned that this can be surprising in smell and taste to those of us who have only ever had the overly processed derivatives. While it is possible that some really did receive a compromised product, I found no detectable rancidity or otherwise off flavors in mine. I do pour the nibs into a bowl so they breath a little and this helps to dissipate the fermented aroma when I am eating some plain.This is an item you do not want to buy in quantity until you have a... Great Coffee Substitute
I was pleasantly surprised with the taste of this product because of the bad reviews on it. I like bittersweet chocolate though so, maybe that's why. I also mix it with yogurt as it says on the bag. The "nibs" are more like crumbles however, that is inconsequential to me as I mix them. These have helped greatly with curbing my chocolate addiction and keeping me on track with my diet. Expensive, but absolutely worth the money...
I love this chocolate powder. My family and I recently became aware that MSG and its hidden forms (autolyzed yeast, hydrolyzed protein, yeast extract, calcium caseinate, natural flavors, etc.) are the source of our health problems. This discovery led to searching for less processed (especially by high heat) food products. This is a great find! Do beware, if you try this stuff you will not be able to go back to Hershey's....it is that good. expensive, yes. but SO worth it!
Okay, so I'm a vegan, and I'm a baker and now that its cold, I become obsessed with this stuff. It has 5g of protein in a serving, is unprocessed so you actually get the cacao benefit instead of Hershey crap, and honestly, its the best cocoa I've ever used. Seriously. The quality is unsurpassed and I cannot even begin to tell you how much you'll use it once you try it. I make my hot chocolate with it! Once you go natural cacao, you just don't go back. I don’t know enough of the technical details of the ‘process’ temperatures involved other than I know they apply extreme pressures to the beans to extract what they need (pressure creates lots of heat).
